We are That Family hosts works for me Wed. Today is the summer recipe edition. Very rarely do I participate in this, but I felt like I needed to share this recipe. It originally came from the Tyson website. This is a staple in our house. I can have it on the table in 15 minutes, it's very few ingredients and my family loves it. Sometimes I will do the chicken on salad or on a baked potatoe! Enjoy!
12 Fresh Chicken Breast Tenders
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 tablespoons vegetable oil
6 corn tortillas
1 small avocado, peeled and cut lengthwise into 12 strips
1/16 Salsa
1-1/2 cups iceberg lettuce, shredded
1. Preheat grill to medium. Combine cumin, salt, cayenne and 1 tablespoon oil in a small dish.
Rub mixture onto chicken.
2. Grill chicken, turning once, 6 to 8 minutes or until done (internal temp 170°F).
3. Just before chicken is done, brush both sides of tortillas with remaining 1 tablespoon oil. Grill just until softened, about 15 seconds per side.
Serving Suggestion: Fill center of each tortilla with 2 chicken tenders, 2 slices avocado, about 1 tablespoon salsa and 1/4 cup lettuce. Fold tortilla over; serve with extra salsa. Refrigerate leftovers.
