On request, here is the salsa I took to MOPS last night. It is from the healthy section of Southern Living. You can eat it with chips, on the side, or our family likes to put it on baked potatoes. Enjoy!
2 med avocados, cubed
can of corn drained
can of black beans, rinsed and drained
1 jalapeno, seeded and chopped (optional)
1/3 cup red onion
3 Tbsp lime juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground red pepper
Mix in a bowl and refrigerate at least an hour
